On my “late days” where I don’t have to be anywhere until the afternoon, one of my favorite things to do is treat myself to a restful morning with some good quiet time and a delicious breakfast. This morning’s was simple: scramble one egg and one egg white, throw a little cheese on top, add some fruit-enjoy! This breakfast is equal parts protein, fruit, yum, and quick and simple and exactly no parts of guilt! You’ve gotta treat your body well sometimes, even if you’re busy like me! It’s the vehicle that moves you and it needs a little love too! 🙂
So these fancy beans are really not so fancy, but they appear as though you have been slaving away at them for hours.
Basically you’ll need:
1 pckg green beans
1 pckg prosciutto
Preheat your oven to 350 degrees. In the meantime, wash and snap the ends off the beans. Pour a little water into a large pot, bring to a boil and allow your beans to steam for no longer than 4 min.
Grab a baking sheet and roughly 5-6 beans. Lay one piece of prosciutto down and your bundle of beans on top and wrap it up.
Drizzle a little EVOO on your bean bundles and sprinkle with a pinch of salt (not much, your prosciutto has plenty of salt) and pepper. Bake for about 10 min or until the proscuitto is crispy .
Yes in deed folks, this creative take on a classic recipe will have them begging for more.
So, let’s get started.
1 container Sweet Baby Rays BBQ sauce
1 container Hidden Valley Ranch
1/4 cup mayo (if you use Miracle whip, please don’t come back to this blog)
2 branches (technical term) of green onions
Get a large pot of water boiling. In the mean time thinly slice your green onions, and set aside. While the water is boiling take a large spoon and gently lay your eggs in for 11 minutes. Once the time has passed, immediately run under cold water.
Now, begin peeling your eggs. If you mess some up, that’s ok..more for you! Once peeled, cut your egg in half lengthwise and gently shake the yolk into a bowl. After you have done this eleven more times, and are probably pretty full of eggs because you messed up more than you want to admit, add your 1/4 mayo and 1 cup ranch. Stir please.
Put the mayo mix in a Ziploc bag, close and cut a tip into one corner. (AKA homemade piping bag…for all you poor broke college folk). Begin piping into your eggs gently. Once completely filled take your BBQ bottle and drop a small dot on top of your filling. Add green onion, and viola! Cheap, tasty and pretty!
As our trip in Texas continued we found ourselves concocting some fantastic recipes for any and all occasions.
One day, we all pitched in and created a wonderful brunch of fresh fruit salad with bacon (because everything is better with bacon), fried eggs and white sharp cheddar cheese sangwiches.
Dad was on egg duty, despite his pure hatred for a runny yolk. While mom and myself put together the fruit salad, Hannes had to most difficult job….to watch and judge. Even doodle (the family Maine-coon cat) got in on some of the action.
1 pckg fresh strawberries, sliced and washed
1 fresh pineapple, cut into cubes
1 tsp fresh mint, chopped
1/2 cup blueberries
1 pckg bacon
1 cup shredded sharp white cheddar cheese (Cabot if you can grab it ha!)
4 English Muffins, sliced and toasted
In a large bowl, mix together fresh strawberries, blueberries, pineapple and mint. Stir and set aside to let flavors combine.
Place the bacon in a skillet and walk to your grill and cook outside for about 12 min. This is beneficial for two reasons. Your hair will not smell like bacon the rest of the day and neither will your house.
While your English muffins are toasting, grab another skillet and add 1/4 tsp butter over medium-low heat. Crack one egg in a bowl (to avoid shells and breakage) and pour it gently into the skillet. Do not move the egg until the edges are white, but yolk is still runny. With great confidence take a spatula and slide it under the egg, and bam! Flip it over, don’t worry if you dont get it the first time. It took me about 12 times until I finally got it right. (Then I was angry and out of eggs).
While everything is still hot place your English muffin on your plate and add egg, cheese and bacon and finish with the other side of the muffin. Toss fruit salad once more and add to plate. Nom Nom!
So as we boarded our two and a half hour flight from Florida, home to Disney world and deaths, I was a little apprehensive to spend Easter in the Lone star state. However, my time in Texas with the folks and Hannes turned out to be even more delicious than I could have ever imagined.
As a traditional Southern girl I am accustomed to the oh-so infamous Honey-baked spiral sliced ham, but in Texas you smoke ’em! My parents neighbors offered to smoke a ham for us since we were already cooking one, and now I am a believer!!!
After what seemed like an eternity and a glorious combination of cherry and pecan wood, the ham was ready to devour! We could not have been more excited.
But don’t worry, all of that tastiness was put to good use. So the next time you are in Texas grab some smoked meat and enjoy one bite at a time!
One of my favorite Christmas presents of all time is this mini Charlie Brown waffle maker! This morning I took over my best friends’ tiny apartment kitchen and made delicious waffles that made everyone smile. 🙂
To make my waffles a little healthier, I simply use water instead of milk, and plain applesauce instead of oil! 🙂 I always add a little bit of vanilla extract to my pancakes and waffles, and sometimes a few dashes of cinnamon! To make my Charlie yellow and my doghouse red, I used yellow and red food dye; for Snoopy’s ears and nose I used just a few milk chocolate chips!
*Healthy Hint: Instead of drizzling syrup on top of your pancakes or waffles, dip your fork in a small bowl of syrup before you use it to pick up your food! You will use significantly less syrup but still get the sweetness!*

One thing I have a hard time with is finding snacks that satisfy my “crunchy cravings”! This past week I discovered the delicious ‘Hi I’m Skinny Sticks’ on sale at Publix and decided to try them. I was completely blown away by how much they did NOT suck and how satisfied I was! For the amount of calories in one regular serving of plain potato chips, you can have TWO servings of these guys WITHOUT loads of grease and what their website refers to as “nasty’s”! 😉 Ha! I just grab a handful and put them into a little snack baggie and munch on them with a sandwich for lunch, or just alone for a snack!
I’m in serious snack love, guys.
I’m always skeptical about drinking anything other than water. I’m even a coffee snob in the way that I actually hate coffee. However, this week I am housesitting and the home owners left a few of these guys in the fridge. I decided to give one a try and lo and behold I’m a fan! 🙂 Not only are the calories and sugar nothing to worry about, the cranberry raspberry flavor is SUPER YUMMY!!! I have no guilt about trading a glass of water for a glass of this-so I know it’s a winner! 🙂
This past weekend was super busy for me, and my eating habits were CRAZY! After really rough periods of time where I don’t treat my body well-I know it is time to get back to the real world and exercise and eat healthy! This particular salad was made fresh this morning in about five minutes with all Publix ingredients!
What you need:
-two handfuls of spring greens
-a mix of chopped cucumber, strawberry, tomato, feta cheese
-dressing of choice
I always feel better when I eat so clean-and I love the leftover chopped mixture with tortilla chips as an afternoon snack!
